Hickory has a distinctive character, making it particularly well suited to drinks based on bourbon, rye, and mezcal — think an Old Fashioned, a Smoked Manhattan, or a Negroni you want to make just a little darker. A small amount is enough; briefly smoke the glass or decanter, and the aromas will linger in the drink.

How to use them

Use the chips with a cocktail smoker or smoking dome. Place a small layer on the grate, light it with a torch until it smolders, and capture the smoke under the glass. Let the smoke infuse for half a minute, then pour in your drink. Experiment with the smoking time: a short time gives a subtle hint, while longer makes the whole drink fuller and woodier. The chips are untreated, so you taste the pure flavor of the wood.

More from this collection

These chips are part of the Speakeasy Premium Collection by Bar Professional, developed for bars that serve signature drinks.
