Don Papa Masskara
Don Papa's most festive bottle. Column-still rum flavored with calamansi, a small Filipino citrus fruit, honey and a touch of Siling Labuyo, the Filipino chili pepper. Fruity, sweet and just a little spicy: made for refreshing cocktails and ginger beer.

A festival in a bottle
Masskara is inspired by the Masskara Festival in the Philippines, a colorful celebration full of masks. Its base is Don Papa rum made from molasses, distilled in column stills and flavored with three Filipino ingredients: calamansi, a small, sour Filipino citrus fruit; Filipino honey; and Siling Labuyo, a small, hot chili pepper.
That makes Masskara a very different drink from 7 Years or Baroko. While those revolve around vanilla and oak, fruit takes center stage here. The honey and vanilla provide sweetness, the calamansi freshness and the chili a warm tingle at the end. It can be enjoyed neat, but it's truly at its best with ice, lime and something fizzy.

Masskara Mule
50 ml Don Papa Masskara, 15 ml lime juice and 120 ml ginger beer in a copper mug filled with ice. The ginger and chili enhance each other.

50 ml Masskara with 150 ml ginger ale in a highball glass filled with ice, with a lime wedge. Softer than with ginger beer, and the calamansi comes through better.
