What mesh do I need?
For fine tea such as rooibos or broken black tea, choose a close perforation, otherwise leaves end up in your glass. For whole leaf such as white tea and oolong, the diameter matters more than the fineness, because the leaf needs room.
How much tea goes into a strainer?
Reckon on about two grams per cup: a level teaspoon for fine leaf and a heaped one for coarse leaf. Never fill the strainer more than halfway, because dry leaf expands considerably while it steeps.
Why does my tea turn bitter?
Usually because the water is too hot or the strainer stays in. Brew green and white tea at around seventy to eighty degrees, and lift the strainer out as soon as the steeping time is up rather than leaving it standing in the glass.
How do I get tea staining off stainless steel?
Tannins leave a brown film that ordinary washing up will not shift. Soak the strainer in warm water with a dash of vinegar or use a cleaning tablet, rinse thoroughly and dry the steel to prevent limescale marks.
