Why does every grape variety have its own glass?
The shape steers where the wine lands on your tongue and how much aroma is released. A narrow bowl holds crisp acidity together, while a wide belly gives a full-bodied red room to breathe without you pouring it too full.
How full do you pour a 96.2 cl Burgundy glass?
To about a third, so around thirty centilitres. A large bowl is not meant to hold more wine but to keep more air above the wine, so the aroma gathers in the narrower top.
What is an effervescence point in a champagne glass?
A finely etched spot on the base of the glass that carbon dioxide clings to. As a result the bubbles rise in an even line instead of disappearing all at once, and the champagne keeps its sparkle longer.
