Which knife do you use for a citrus twist?
The paring knife of 9 cm. Its slightly curved edge follows the curve of the fruit, so you take off a strip of peel about two centimetres wide without the white, bitter part underneath.
Is a wooden or a plastic cutting board better behind the bar?
Plastic, because it can go in the dishwasher and therefore really gets clean after an evening of lime. Wood looks better for work in view of guests, but has to be washed by hand and dried standing up so it does not warp.
What do you use a nakiri knife for?
For cutting many slices in a row. The straight blade runs down to the board along its full length, so you cut in one downward movement instead of rocking the way you would with a curved chef's knife.
Can bar knives go in the dishwasher?
Better not. The detergent dulls the edge and attacks wooden and plastic handles. Wash them by hand, dry them immediately, run them over a sharpening steel regularly and store them so the blades do not touch.
