How long does champagne keep with a stopper?
With a clamping stopper on the bottle the bubbles stay usable for a day or two, provided the bottle is kept cold. Without a stopper the carbonation is as good as gone within a day.
Does an ordinary stopper work on a champagne bottle?
No. The pressure inside a champagne bottle pushes an ordinary cork stopper straight back out. You need a model with levers that grips under the thick ring of the bottle mouth and clamps itself there.
What does a vacuum pump do to wine?
It draws the air out of the bottle, so less oxygen reaches the wine and oxidation slows down. Pump until you feel resistance and no further, because aromas leave along with the air.
What is the difference between vacuum and argon?
A vacuum pump removes air, while an argon system lays a heavy noble gas over the wine that pushes the oxygen aside like a blanket. Argon leaves the aromas alone and therefore works better with fine wines.
Do I store an opened bottle upright or on its side?
Upright, with a stopper on and in the fridge, red wine included. Standing up, less wine touches the air. Let red wine come back up on the table for half an hour before serving.
